Hay Shed Hill Vineyard Series Cabernet Merlot is a juicy, fruit-driven red blending two classic Bordeaux grapes grown in Western Australia.

From its base in Wilyabrup, the Hay Shed Hill team uses the Vineyard Series to show approachable, varietal expressions of Margaret River. The region's maritime climate, shaped by the Indian Ocean, suits both Cabernet and Merlot, and the pairing here is about balance: structure and blackcurrant from the Cabernet, plushness from the Merlot. Oak plays a supporting role, adding a hint of cedar, and the finished wine is medium in weight with a fleshy palate and gentle tannins.

Open it young and enjoy it just below room temperature, at about 16 degrees. Try it with beef burgers, a mushroom risotto or a slow-cooked beef ragu.
