Heirloom Vineyards Coonawarra Cabernet Sauvignon is a deep, firmly structured Cabernet with a nod to Bordeaux.

Few Australian regions are as closely linked to one grape as Coonawarra is to Cabernet Sauvignon. Its cool maritime climate and shallow red soils over limestone give wines of intense colour, firm tannin and distinctive regional mint. Made for the Heirloom range by Elena Brooks, this one shows cassis, blackcurrant and menthol, with warm baking spice and a floral lift. A wall of tannin gives way to plush cassis fruit and clean acidity, finishing precise and long.

Match it with beef Wellington, slow-roasted lamb or a porcini risotto. Serve at around 17 degrees, and give it time: this is a wine for the cellar as much as the table.
