Henriques & Henriques Monte Seco Extra Dry 3Yo is a pale, off-dry aperitif madeira made predominantly from Tinta Negra with 10 per cent Sercial.
Madeira is fortified and then deliberately heated, a practice that began by accident on long sea voyages and is now controlled in the cellar. Henriques & Henriques, based at Câmara de Lobos, produce their three-year-old blends through an estufa process set up specifically for these wines, after which they spend three years in oak cask before bottling. Monte Seco is the driest wine in the range, its base of Tinta Negra sharpened by a small proportion of Sercial, the island's most bracing noble white. The style is deliberately pale and light rather than concentrated, made for drinking cold and in quantity rather than sipping after dinner, and it holds up well as a mixer. Bottled at 500ml.
Drink now; an open bottle keeps for months. Serve well chilled at 8–10°C, or on the rocks with a twist of citrus, with smoked salmon, charcuterie or a long pour of tonic.
