Henschke Johanne Ida Selma Blanc de Noir is a traditional-method sparkling made entirely from Pinot Noir.

A blanc de noir is a white wine pressed from black grapes, and the fruit here comes from cool high-altitude sites where Pinot Noir keeps the acidity the style needs. The wine honours Johanne Ida Selma Henschke, who held the family estate together through the first half of the twentieth century. It is whole-bunch pressed, fermented with a portion in old oak, then bottle-fermented and left on lees for several years before disgorgement, in the same way Champagne is made.

Serve at 8 degrees as an aperitif, or with oysters, cured salmon or roast chicken. Drink on release.
