Hickinbotham The Nest Cabernet Franc 2021

Hickinbotham The Nest is a rare Australian varietal Cabernet Franc, from the Clarendon vineyard in the hills.

Cabernet Franc is grown widely in Bordeaux and the Loire but almost always blended in Australia. Clarendon's cool elevation suits it, giving the leafy, red-fruited character the variety shows in the Loire rather than the green edge it takes on when underripe. The vineyard was planted in 1971 on clay over ironstone. The wine is fermented in small open vessels and matured in French oak.

Serve at 16 degrees with roast chicken, pork or charcuterie. Drink over the next ten years.
