Hochkirch Blanc 2021

Hochkirch Blanc is a Semillon-dominant white blend from the cool Henty region of western Victoria.

Semillon makes up 95 per cent of this blend, with Sauvignon Blanc supplying the last five, and a cool season meant the estate fruit came in at surprisingly low Baumé. Everything was handpicked, with 30 per cent kept as whole bunches and the balance destemmed, then left five days on skins before pressing to tank to finish fermenting naturally. Racking took the wine, fine lees and all, into used 500-litre puncheons, where it stayed until the January after harvest, went through full malolactic conversion and received no additions of any kind. Henty is Victoria's coolest wine region, and biodynamic farming here is well established.

Lemon, wet wool and a faint herbal snap, with real texture from the skin contact and a dry, chalky finish. Serve at 10 to 11 degrees. Good with grilled fish, chicken schnitzel or a plate of oysters and lemon.
