Cuvée Constance is Domaine Huet's botrytis selection, made only in vintages that allow it and drawn from whichever of the estate's three crus have delivered.
Vouvray sits on the right bank of the Loire east of Tours, on tuffeau limestone capped with flinty clay, and Chenin Blanc is its only grape; in favourable autumns, mists off the river bring noble rot to the best-exposed parcels. Victor Huët, a Parisian bistro owner, settled here in 1928 and his son Gaston took charge from 1937. The domaine holds three of the appellation's finest sites — Le Haut-Lieu, nearly nine hectares of deep limestone-clay; Le Mont, bought in 1957, stonier and rich in green mica; and Clos du Bourg, the poorest and shallowest soils on the Première Côte. Huet began farming biodynamically in 1990 and has been certified since 1993; Benjamin Joliveau has made the wines since 2009. Constance, first made in 1989, is picked berry by berry in repeated passes and pressed very slowly. The 500ml bottle is its standard format.
Drinkable now and capable of decades. Serve at 8–10°C with blue cheese, apple tart or foie gras.
