Idée Fixe Premier Brut Blanc de Blanc is a fine, chalky Margaret River sparkling wine made entirely from Chardonnay.

Behind the label is Vasse Felix, Margaret River's founding wine estate, which set up Idée Fixe to focus solely on traditional-method sparkling. This Blanc de Blanc draws on Chardonnay from the cool southern end of the region, where the maritime influence shows in notes of oyster shell, wet stone and sea mist. Yellow plum and golden kiwi add gentle richness, while lemon and Granny Smith apple drive freshness through the palate. A fine mousse leads to a long, chalky finish with mineral tension.

Chill well and pour with freshly shucked oysters, sashimi or tempura. It makes a fine Australian alternative to Champagne for any celebration.
