Idée Fixe Premier Brut Blanc de Blanc 2024

Idée Fixe Premier Brut Blanc de Blanc is a savoury, lees-aged Chardonnay sparkling from Western Australia's Margaret River.

A long-held fascination with Blanc de Blancs at Vasse Felix led to Idée Fixe, a name meaning a fixed idea or obsession. The wine is made from Chardonnay grown in the cooler south of Margaret River, and extended time on lees builds layers of brioche, pastry and almond cake around flint, oyster shell and orange blossom. Citrus and crunchy orchard fruit carry across a textured palate, with a taut acid line and carefully judged dosage leading to a long, saline finish.

Try it with fried calamari, crab sandwiches or a wedge of aged comté. Serve well chilled, ideally in a white wine glass so the aromas can open.
