Description
Ionis 431 Verdeca IGP is a native Puglian white from the Valle d’Itria, the distinctive limestone landscape that stretches through the heart of Puglia. Verdeca has a long association with this part of southern Italy, where rocky soils, persistent breezes and significant differences between daytime and nighttime temperatures help maintain freshness despite the warm Mediterranean climate.
The grapes are destemmed and chilled to around 6 to 7 degrees for approximately 24 hours of cold maceration before the free-run juice is separated from the skins. Fermentation then takes place in stainless steel at a controlled 12 to 14 degrees, an approach designed to retain the freshness and varietal character of Verdeca. The name 431 provides a contemporary identity for a wine firmly rooted in one of Puglia’s traditional white grapes.
Serve at around 8 to 10 degrees as an aperitif or with raw seafood, shellfish, grilled fish and seafood pasta.

Zucchine alla Poverella (Puglian Zucchini with Mint & Vinegar)
Ingredients:
- 700g zucchini, thinly sliced into rounds
- 2 garlic cloves, thinly sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar
- 2 tbsp fresh mint leaves, roughly torn
- Salt and cracked black pepper
- Crusty bread, to serve
Instructions:
- Spread the sliced zucchini on a clean tea towel and leave for 20–30 minutes to remove some of their moisture.
- Heat the olive oil in a large frying pan over medium-high heat.
- Add the zucchini in batches and cook until tender and golden around the edges, transferring each batch to a serving dish as it is ready.
- Reduce the heat, add the garlic to the pan and cook briefly until fragrant without allowing it to brown.
- Pour in the white wine vinegar and allow it to bubble for a few seconds, then spoon the mixture over the zucchini.
- Season with salt and cracked black pepper and scatter generously with fresh mint.
- Leave the zucchini to rest for 15–20 minutes before serving at room temperature with crusty bread.
A traditional Puglian vegetable dish, Zucchine alla Poverella is an excellent match for Valle d’Itria Verdeca. The wine’s bright acidity complements the vinegar and fresh mint, while its delicate fruit and mineral character pair naturally with the sweet, golden zucchini and extra virgin olive oil.
