Jansz Tasmania Late Disgorged Vintage Cuvée 2017

Jansz Tasmania Late Disgorged Vintage Cuvée is a long-aged Tasmanian sparkling, held on its lees for years before release.

Set up at Pipers River in Tasmania's north-east in the mid-1980s, originally in partnership with a Champagne house, the winery has become one of Australia's leading sparkling specialists and is now owned by the Hill-Smith family of Yalumba. Every wine is made by the traditional method, which the house calls Méthode Tasmanoise, with the second fermentation taking place in the bottle. For this Late Disgorged release, a single-vintage blend led by Chardonnay, with Pinot Noir adding texture and finesse, spent seven years on yeast lees before disgorging. That extended ageing builds layers of brioche, pastry and toast, while Tasmania's cool-climate acidity keeps the wine tight, fresh and savoury through the finish.

Serve well chilled, around 8 to 10 degrees, in a white wine glass so the bottle-aged complexity has room to show. It suits richer seafood such as crayfish, scallops in brown butter or smoked trout, and it can also sit alongside roast chicken or aged hard cheeses.
