Jasper Hill Georgia's Paddock Shiraz is a dry-grown, bio-dynamically farmed Heathcote Shiraz offered here as a mature, cellar-aged release.
Jasper Hill was established in 1975 by Ron and Elva Laughton on the Cambrian-era red soils of Heathcote in central Victoria, and is now run with their daughters Emily and Georgia, after whom the two estate paddocks are named. The vineyards are dry grown on their own roots, without irrigation, and are farmed with organic and bio-dynamic practices, with no synthetic herbicides, pesticides or fertilisers. Georgia's Paddock is the larger of the two blocks, planted predominantly to Shiraz on deep, decomposed greenstone soils that hold moisture well through the warm Heathcote summers. The fruit is hand picked, fermented with indigenous yeasts in open vats and matured in French oak barrels before bottling with minimal intervention.
With bottle age the firm structure of this full-bodied Shiraz softens into a more savoury, layered wine, well suited to roast lamb, venison and aged cheddar; serve at around 17 degrees.
