Jasper Hill Georgia's Paddock Shiraz 375ml is the half-bottle format of the dry-grown, bio-dynamically farmed Heathcote Shiraz from the Laughton family estate.
Jasper Hill was established in 1975 by Ron and Elva Laughton on the Cambrian-era red soils of Heathcote in central Victoria, and is now run with their daughters Emily and Georgia, after whom the two estate paddocks are named. The vineyards are dry grown on their own roots, without irrigation, and are farmed with organic and bio-dynamic practices, with no synthetic herbicides, pesticides or fertilisers. Georgia's Paddock is the larger of the two blocks, planted predominantly to Shiraz on deep, decomposed greenstone soils that hold moisture well through the warm Heathcote summers. The fruit is hand picked, fermented with indigenous yeasts in open vats and matured in French oak barrels before bottling with minimal intervention.
A full-bodied, structured Heathcote Shiraz with real depth and a firm savoury frame, it suits slow-roasted lamb, beef braises and hard cheeses; serve at around 17 degrees.
