Description
JC's Own Stratum is a western ridge Barossa Shiraz matured in cement rather than oak.
JC's Own is the personal label of Barossa winemaker Jaysen Collins, co-founder of Massena, made in small quantities from vineyards he knows closely. Stratum is Shiraz from the Barossa's western ridge, an elevated band of districts including Seppeltsfield, Marananga and Greenock, whose red brown soils over ironstone and clay are known for Shiraz of depth and firm structure. Here the fruit is fully de-stemmed and the wine is aged for ten months in cement, a neutral vessel that allows gentle oxygen exchange without adding oak flavour, keeping the focus on fruit purity and the character of the site. The result is a more open, fresher style of Barossa Shiraz than the traditional oak matured model.
Bright and supple, it suits grilled meats, burgers, lamb and hard cheeses; serve at around 16 to 17 degrees.
