Description

Jean-Baptiste Souillard's Marsanne is a skin-contact white blending Hérault fruit with a third from Saint-Joseph.

Souillard is one of a small group of young growers who came to the northern Rhône from outside the region and now work between Ampuis and the Languedoc. His Marsanne has historically come from a 0.2-hectare parcel west of Béziers at Capestang in the Hérault; from 2022 the wine also takes in Saint-Joseph fruit from the granite soils of Le Chavanat and Les Pales, both at Andance. The grapes spend a short period on skins before basket pressing, and some of the press fraction is kept, which firms up the structure and gives the skinsy, savoury grip that makes the wine work at the table. Fermentation is spontaneous in old oak, where the wine then rests through two winters and completes malolactic conversion before bottling.

Drink now to about five years, at 10–12°C, with roast pork, grilled chicken or a plate of hard cheese.
