Description
Jean-Louis Chavy Puligny-Montrachet Champs Gains is a premier cru from the stony upper slope of the commune, towards the Chassagne boundary.
Les Champs Gains is a premier cru on the upper slope of Puligny-Montrachet, near the Chassagne boundary, where soils are shallow and stony and the vines sit above the village at the top of the incline. Wines from here are among the more tightly wound of Puligny's premier crus, high in acidity and slow to open, with the chalky, citrus-driven quality the commune is known for rather than obvious richness. Jean-Louis Chavy works a small domaine from Puligny, formed when the Gérard Chavy holdings were split between his sons, and makes the wines in a restrained register: whole-bunch pressing, barrel fermentation with little new wood, and long ageing on fine lees.
Tense and slow to unwind, it rewards a few years and suits turbot, scallops and poultry in cream; serve at around 12 degrees.
