Jean-Louis Chavy Puligny-Montrachet Les Folatières 2023

Jean-Louis Chavy Puligny-Montrachet Les Folatières is a premier cru from the largest and best known climat above the village.

Les Folatières is the largest and best known of the Puligny-Montrachet premier crus, running up the slope above the village on shallow, rocky ground with only a thin cover of soil over hard limestone. It sits higher than the grand crus below it and gives a wine of noticeable finesse: floral and high-toned in youth, with a chalky, driving finish and the sort of tension that rewards a decade in bottle. Jean-Louis Chavy took on his part of the family holdings when the Gérard Chavy domaine was divided, and works from a cellar in Puligny with whole-bunch pressing, barrel fermentation, sparing new oak and long ageing on fine lees.

Floral and mineral, it suits shellfish, turbot and Bresse chicken; serve at around 12 degrees.
