Jean-Louis Chavy Puligny-Montrachet Les Perrières is a premier cru from the lower slope of the commune, immediately beside Bâtard-Montrachet.
Les Perrières is a premier cru on the lower slope of Puligny-Montrachet, next to Bâtard-Montrachet and Les Pucelles, and the name, as everywhere in Burgundy, points to stony ground once quarried for building rock. It gives one of the firmest and most structured wines in the commune, with real density behind the acidity and a habit of saying very little for its first few years in bottle. Jean-Louis Chavy farms a small estate in the village, created when the Gérard Chavy domaine was divided, and works in a deliberately understated way: whole-bunch pressing, fermentation and ageing in barrel with only a modest share of new oak, and extended time on fine lees.
Dense and structured, it is worth cellaring and suits lobster, turbot and rich poultry dishes; serve at around 12 degrees.
