Description
Jean-Marc et Thomas Bouley Volnay 1er Cru Les Carelles Sous la Chapelle is a red Burgundy from one of the most highly regarded villages of the Cote de Beaune.
Volnay makes red wine only, and has long been considered the most finely drawn of the Cote de Beaune communes, its premiers crus running along a slope of thin limestone soils above the village. Carelle sous la Chapelle sits in the middle of that slope, just below the chapel from which it takes its name, on shallow soil over hard rock. The domaine is based in Volnay and run by the Bouley family, with Thomas Bouley working alongside his father, farming parcels across the village and into neighbouring Pommard. The wines are made without heavy extraction and raised in oak barrel, with new wood used sparingly.
Best given five years or more in the cellar, and served at around 15 degrees with poultry, veal or mushroom dishes.
