Description
Jean-Pierre Boistard Vouvray moelleux is a gently sweet Chenin Blanc from fruit picked late enough to leave sugar in the finished wine.
Moelleux is the Vouvray term for a sweet wine, made from fruit left on the vine into late autumn and picked in successive passes as sugar accumulates, sometimes with the help of botrytis. Boistard farmed the plateau east of Tours and previously owned the vineyards Vincent Carême works today. The appellation's clay and flint soils over tuffeau limestone, together with Chenin Blanc's very high natural acidity, keep even the sweet wines from tasting heavy, and they are among the longest-lived whites in France. The sweetness here is gentle rather than unctuous, a moelleux at the lighter end of the scale, and long rest in the cool tuffeau cellars has drawn sugar and acidity together.
Moderately sweet and fully mature; serve at around 10 degrees with blue cheese, foie gras or a simple fruit tart.
