Description

Jean-Pierre Boistard Vouvray tendre is an off-dry Chenin Blanc made by the grower who once owned the vineyards Vincent Carême farms today.

Boistard farmed in Vouvray, on the right bank of the Loire east of Tours, where the appellation's plateau of clay and flint over tuffeau limestone is planted entirely to Chenin Blanc. It is a grape whose acidity allows bottles to be held for decades in the cool cellars cut into that rock, and the fruit is picked in successive passes through the vineyard, each tri taking only the bunches that have reached the ripeness the intended style needs. Tendre is the local term for a wine left with a little residual sugar, short of a full demi-sec; with long ageing that sugar folds into the texture of the wine rather than sitting on top of it, and the balance shifts steadily towards savoury.

Expect a mature, honeyed but still firm white; serve at 11 to 13 degrees with roast chicken, pork terrine or hard cheeses.
