Jensen's Old Tom Gin

Jensen's Old Tom Gin is an unsweetened Old Tom gin distilled from an 1840s recipe.

Old Tom is usually sweetened; this one is not. The recipe came out of a handwritten distiller's notebook dating from the 1840s, and the Bermondsey distillery holds the evidence that this is the closest reconstruction available of the Old Toms that bartenders actually used through the nineteenth century. Classic botanicals only, but roughly ten times the quantity, weighted heavily towards roots and spices. It runs through the same 500-litre John Dore and Co still as the Bermondsey Dry, a stainless vessel with copper cone head and lyne arm, heated by water jacket and licensed in 2014.

A huge root hit on the nose, full of musk and spice, smelling sweet while the palate stays dry. The flavour is tightly wound neat and opens right up once mixed. Built for a Martinez, a Tom Collins or a Ramos Gin Fizz, and it makes a fine gin and tonic too.
