Joh Jos Prüm's Spätlese from Bernkasteler Badstube, a naturally sweet Mosel Riesling in the estate's lighter, more playful register.
Badstube is a collective site covering several slopes above Bernkastel, and its wines are typically a little more open and earlier-drinking than those from the great Sonnenuhr vineyards further upstream. Spätlese means late harvest, one rung above Kabinett, and on the Mosel it produces wines of modest alcohol with clear natural sweetness held in check by bracing acidity. Joh Jos Prüm works from Wehlen under Dr Manfred Prüm and his daughter Katharina, picking by hand in several passes, pressing whole bunches and fermenting slowly with the vineyard's own yeasts in stainless steel. There is no oak and no attempt to hurry anything along; fermentation simply stops while sugar remains, and the wine is bottled and then held back at the estate until it is judged ready to leave. Even so, Prüm wines are typically reserved in their first years and reward cellaring.
Enjoyable now, better after a few years, and sound for two decades. Try it with pork belly, a fresh fruit tart or spiced noodles; serve at 8-10°C.
