Joh Jos Prüm Bernkasteler Badstube Riesling Spätlese is a Mosel Riesling from the slopes around Bernkastel, made in the low-alcohol, long-lived style the family has held to for over a century.
Badstube gathers the finest slopes immediately around Bernkastel on grey Devonian slate; it is the gentlest of the estate's holdings in character, giving wines that open a little earlier. Joh. Jos. Prüm has been based at Wehlen since 1911 and is now run by Katharina Prüm, working to a house style that has changed very little. Fruit is picked in successive passes so that each parcel comes in at the intended ripeness, whole bunches are pressed gently, and fermentation runs with ambient yeasts in stainless steel before stopping of its own accord, leaving the grape's own residual sugar. At Spätlese level the wines remain light in body but gain markedly in intensity and depth against the Kabinett, with more flesh and power rather than more overt sweetness, which is why the estate considers this the most versatile bracket at the table.
It is thoroughly enjoyable young and will gain depth for decades; serve at 8-10°C with roast chicken, smoked trout or moderately spiced Thai and Chinese dishes.
