Joh Jos Prüm Wehlener Sonnenuhr Riesling Auslese 375ml 2020

A half-bottle of Joh Jos Prüm Auslese from the Wehlener Sonnenuhr, the estate's home vineyard on blue Devonian slate.

Wehlen sits in the heart of the Middle Mosel, and the Sonnenuhr slope above it is one of the most valuable pieces of vineyard in Germany, named for the sundial an ancestor of the Prüm family had built into the hillside in 1842. The slate here is grey-blue, weathered and free-draining, and the near-vertical southerly exposure allows Riesling to ripen while retaining the acidity that defines the region. At Auslese level the fruit is selected in successive picking passes, and the wine ferments slowly with wild yeasts in stainless steel before being bottled with a good measure of natural residual sugar. Dr Manfred Prüm and his daughter Katharina hold the wines back for a long period after bottling; young Prüm is often closed and slightly spritzy, and the estate has never made any secret of preferring that customers wait. The 375ml format is useful for those who want to open one earlier.

Patience pays here, and the wine will run for decades. Serve with apple or apricot tart, crème caramel or a firm washed-rind cheese at 8-10°C.
