Joh Jos Prüm Zeltinger Sonnenuhr Riesling Auslese Long Goldkapsel is the top selection of the estate's Auslese from the Zeltingen sundial slope.

The Zeltinger Sonnenuhr rises directly above the river on the left bank, its blue Devonian slate and sundial marking one of the middle Mosel's classic sites; it gives Riesling more firmly structured and saline than the softer Graach and Wehlen slopes. Joh. Jos. Prüm has been based at Wehlen since 1911 and works to a settled method: whole-bunch pressing, ambient-yeast fermentation in stainless steel, and a ferment left to stop naturally. A Goldkapsel is not a category in German wine law but a house marker: Katharina Prüm uses it for limited lots of the best Auslese of a vintage, made from stronger, selected berries with more concentrated juice and usually some influence of botrytis. Multiple passes and severe selection in the vineyard are needed to assemble one. These wines age even longer than a standard Auslese, gradually shedding the impression of sweetness and gaining elegance and depth. The Long Goldkapsel marks the very best cask of a given year.

Cellar it for as long as you can spare; serve at 8-10°C with fruit desserts, blue and washed-rind cheeses, or robust spiced savoury dishes.
