A long gold capsule Auslese from Zeltinger Sonnenuhr, the top selection Joh Jos Prüm makes in the years it can.

The Zeltinger Sonnenuhr is one of the great slate amphitheatres of the middle Mosel, its steep south-facing slopes named for the sundial cut into the rock above them. Joh Jos Prüm has worked here for generations and its wines are known for their lightness of touch and extraordinary longevity. Gold capsule bottlings are, as Katharina Prüm puts it, limited lots of the best Auslese of a vintage, made from stronger selected grapes with more concentrated juice and usually some botrytis. This year they took sheer persistence: multiple passes through the vineyard and severe selection, with picking continuing into the last days of October. Botrytis was scarce, but enough was gathered to account for roughly a third of the fruit. The wines ferment with natural yeasts and are bottled with low alcohol and high acidity, which is what allows them to age for decades and slowly trade sweetness for harmony. This is the half-bottle.

Approachable young but built for the very long term; serve at 8-10°C with a fruit-based dessert or crème caramel, or with cheese and spicy dishes as it ages.
