John Duval Integro Cabernet Shiraz 2016

John Duval Integro Cabernet Shiraz is a flagship-level Barossa blend of Cabernet Sauvignon and Shiraz, released after extended cellaring.

Cabernet and Shiraz is a traditional Australian pairing, and John Duval knows it well from his years as chief winemaker at Penfolds. Integro brings together the two varieties from carefully chosen parcels, and it is sealed under cork. The winery held it back before release, and the supplier says it is now entering its drinking window. It shows savoury black fruit, plum and blackberry with sage, clove and earth, layers of powerful dark fruit, hints of spice and licorice, and firm, fine-grained cedary tannins.

Decant this wine for an hour or so and serve at around 17 to 18 degrees. A rare roast of beef, braised oxtail or a hard aged cheese will suit it. According to the supplier it will keep drinking well for twenty years or more.
