Jonathan Didier Pabiot Pouilly Fumé Aubaine 2018

Aubaine was Jonathan Didier Pabiot's first single-terroir Pouilly-Fumé, from mature vines on caillottes at Tracy-sur-Loire.

Caillottes is a weathered Portlandian limestone that leaves the surface of the vineyard covered in stones, and it tends to give the more open, fruit-forward wines of the appellation, as against the slower, firmer wines from the flinty silex soils nearby. Pabiot farms biodynamically and hand-harvests this one-hectare block of Les Champs de Cris, sited high above the river on a plateau. Aubaine translates roughly as something to be appreciated, and it is the easier going of the estate's two single vineyards. The winemaking is identical across both, so the difference is purely the soil: the grapes are pressed, fermented with natural yeasts and raised in concrete for eighteen months. The wine has classic limestone drive, a chalky texture and a long, refreshing finish.

Drinking well now and good for five years; serve at 10-12°C with grilled fish, goat's cheese or a chicken salad.
