Jonathan Didier Pabiot Pouilly Fumé Aubaine is the domaine's first single-terroir cuvée, from one hectare at Tracy-sur-Loire.
Pouilly-Fumé sits on the right bank of the upper Loire opposite Sancerre, and its Sauvignon Blanc is generally the firmer and slower to open of the two. Jonathan Didier Pabiot farms biodynamically and bottles his best sites separately. Aubaine comes from mature vines at Tracy-sur-Loire on caillottes, a weathered limestone of Portlandian origin that leaves the surface thick with stones; the parcel is one hectare of Les Champs de Cris, high above the river on a plateau, and Pabiot describes it as a joy to work. The grapes are hand-harvested, pressed, fermented with natural yeasts and raised in concrete for eighteen months. That is precisely the treatment given to the domaine's Prédilection cuvée, so the difference between the two comes down to terroir alone. Aubaine translates roughly as something to appreciate, and it is the more approachable of the pair.
Drinking well now and for six to eight years; serve at 11-12°C with grilled fish, roast chicken or a crottin.
