Jonathan Didier Pabiot Pouilly-Fumé Aubaine 2022

Jonathan Didier Pabiot Pouilly-Fumé Aubaine is the estate's first single-terroir bottling, from one hectare of caillottes at Tracy-sur-Loire.

Pouilly-Fumé faces Sancerre across the Loire, and its soils shift between heavy terres blanches marl and the stony, weathered limestone known as caillottes. Aubaine comes from Les Champs de Cris, a plateau vineyard high above the river on Portlandian caillottes with plenty of surface stone, a site Pabiot describes as a joy to work. The wine is made identically to its sibling Luminance, so the difference between them is a matter of soil alone: hand-harvested, naturally vinified and raised mostly in concrete with 20 per cent in old oak and porcelain amphora, for eighteen months. Aubaine means something to appreciate, and it is the more approachable of the two, though it sits well outside what the appellation's tasting panel treats as typical.

Drinking now and good for five or six years. Serve at 10-12°C with grilled whiting, chicken with herbs or a goat's cheese souffle.
