Jonathan Didier Pabiot Pouilly-Fumé Elisa is the first Pouilly in the range, drawn from the domaine’s younger vines and named after the grower’s youngest daughter.
Pouilly-Fumé occupies the eastern bank of the Loire opposite Sancerre, where Sauvignon Blanc grows on a patchwork of limestone, silica and flint. This wine, previously labelled Prélude, is assembled from a selection of lieux-dits covering the full range of those soil types. Shrewd yields and precise farming lift it above what its place at the foot of the range would suggest. The grapes are pressed as whole bunches with some crushing for structure, and the wine ages in stainless steel on lees for eight to twelve months, with no oak involved. Despite the modest price it is the smallest bottling the domaine makes.
Drink over the next two or three years. Serve at 10-12°C with oysters, goat’s cheese or grilled asparagus.
