Jonathan Didier Pabiot Pouilly Fumé Florilège 2019

Jonathan Didier Pabiot Pouilly Fumé Florilège is a biodynamic assemblage of mature vines drawn from the estate's three principal soil types.

Pouilly-Fumé sits on the right bank of the Loire opposite Sancerre, and its reputation rests on the interplay between three soils: caillottes limestone gravel, the heavier terres blanches clay and the flinty silex that gives the appellation its smoky name. Florilège is Jonathan Didier Pabiot's calling card, assembled from mature vines across all three, in the lieux-dits Les Champs de Cris, Les Asserts, Villiers and Les Champs Piot. The vineyards are farmed biodynamically and densely planted at 10,000 vines per hectare, with yields held to 30 hectolitres per hectare. Ninety per cent of the crop was fermented and raised in concrete cuve and stainless steel, with the remaining ten per cent fermented in barrel and blended back for complexity. The wine spent at least twelve months on lees, which builds texture without blunting the citrus clarity or the fine phenolic grip.

Drinking well now and will develop over five years. Serve at 10-12°C with grilled snapper, asparagus or fresh goat's cheese.
