Jonathan Didier Pabiot Pouilly-Fumé Léon is the estate’s calling card, an assemblage across its three key soil types, bottled here in half-bottle.
Pouilly-Fumé faces Sancerre across the Loire, and its reputation rests on the interplay of three soils: caillottes, terres blanches and silex, the flint that gives the appellation its smoky name. Léon, formerly bottled as Florilège, blends mature vines from all three, drawn from the lieux-dits Les Champs de Cris, Les Asserts, Villiers and Les Champs Piot, all planted at a dense 10,000 vines per hectare. Jonathan Didier Pabiot crops at 30 hl/ha to get the depth he wants. Eighty per cent of the crop is fermented and raised in concrete cuve and stainless steel, with twenty per cent barrel-fermented juice blended in for complexity, and the wine spends twelve to eighteen months on lees to build texture while holding its brightness. Alcohol is a refreshing 13 per cent.
The 375ml format suits a lighter meal or a single course; drink over the next three or four years. Serve at 10-12°C with oysters, grilled whiting or goat’s cheese.
