Jonathan Didier Pabiot Pouilly-Fumé Luminance comes from a single steep terraced parcel of Kimmeridgian marl whose active lime content runs above 70 per cent.
Pouilly-Fumé lies on the right bank of the Loire opposite Sancerre, and its Sauvignon Blanc changes character sharply with the soil beneath it. Luminance, formerly bottled as Prédilection, comes from terres blanches — Kimmeridgian marl — in a terraced vineyard close to the cellar at Les Loges, planted by Didier Pabiot and now averaging 50 years of age. The soil is very poor and its high active lime content makes the vines struggle, which gives a saltier, more tightly coiled wine than the estate’s Aubaine cuvée; Pabiot likens the difference to that between Chablis and the Côte d’Or. The style is polished and tense rather than overtly aromatic, with a density and grip that is unusual in the appellation.
Good now and will reward three to five years in bottle. Serve at 10-12°C with grilled fish, seared scallops or a fresh goat’s cheese.
