Jonathan Didier Pabiot Pouilly-Fumé Prédilection 2019

Jonathan Didier Pabiot Pouilly-Fumé Prédilection is a biodynamic single-parcel Sauvignon Blanc from steep terraced Kimmeridgian marl at Les Loges.

Pouilly-Fumé sits on the right bank of the Loire opposite Sancerre, and its finest sites are the terres blanches, the Kimmeridgian marls that give Sauvignon Blanc a saline, mineral cast rather than an overtly aromatic one. Prédilection comes from a single beautiful terraced parcel close to the cellar in Les Loges, planted by Didier Pabiot and now averaging 50 years of age. The active lime content is above 70 per cent, so the vines struggle on very poor soil, and yields here were a meagre 28 hl/ha. Jonathan Didier Pabiot farms biodynamically, and the fruit is handled to preserve tension rather than to build weight. The result is luminous and mouth-filling but tightly focused, with wet-rock mineral expression, threads of salinity, a lick of green herbs, tangy acidity and phenolic grip that push the wine to the fuller limit of the appellation.

Drink it from now over the next five to eight years, with grilled turbot, Crottin de Chavignol or asparagus. Serve at 10–12°C.
