Jonathan Didier Pabiot Pouilly Fumé Prélude 1.5L MAGNUM 2020

Jonathan Didier Pabiot Pouilly Fumé Prélude is the domaine's young-vine cuvée, drawn from lieux-dits across the appellation's soil types.

Prélude is the first wine in the Pabiot range and was established only in 2018. It is cropped from the domaine's younger vines, though yields are kept low and the farming, which is biodynamic, is no less exacting than for the single-vineyard bottlings. The fruit comes from a selection of lieux-dits covering the full spread of Pouilly's soils, limestone, silica and flint among them, which is part of why it holds together as a Pouilly-Fumé rather than reading simply as a varietal Sauvignon. The grapes were mostly whole-bunch pressed, with a proportion crushed for structure, and the wine was aged on its lees in stainless steel for six to eight months, with no oak involved. It is styled for early drinking, which is not always the case at this address.

Best over the next three or four years; serve at 10-11°C with oysters, goat's cheese or asparagus.
