Kanosuke Distillery Single Malt Japanese Whisky 2021

Kanosuke Distillery Single Malt Japanese Whisky is a coastal Japanese single malt from Kagoshima Prefecture.

Maturation conditions at Hioki are unusual. The warehouses stand on the shore of the East China Sea, mild through summer and wild and windy the rest of the year, and the salt air works its way into the wood. Behind the whisky is Komasa Jyozo, a long-established Kagoshima shochu producer that added a malt distillery in 2017 and equipped it with three pot stills of differing neck and lyne arm geometry. Ex-shochu casks are part of the maturation regime here, which is not something you find anywhere else.

Smooth and spicy, with orchard fruit, toffee and a faintly saline edge on the finish. Drink it neat at room temperature, or add a little water to release the aromatics. A single large cube works in warm weather; a highball with good soda is the other honest option.
