Kings County Bottled-in-Bond Bourbon Batch #12 is a seven-year-old bonded bourbon from a single 2015 distilling season.

Twenty-three barrels came out of the autumn 2015 season, each holding 53 gallons, and only six of them were chosen for Batch 12, bottled in spring 2023. That makes this the oldest bonded blend the distillery has released, at a little over seven years, and the first built exclusively from standard-format barrels. The bonded designation requires a single distillery, a single season, four years minimum and exactly 100 proof, so what reaches the glass is an unvarnished record of how Kings County was making whiskey seven years earlier.

Spiced apple, toffee brittle, dried apricot and lanolin on a richly layered nose, then salted caramel, pomegranate and balanced oak across the palate. Serve neat at room temperature. Water opens it; ice closes it. Skip the cocktail and give this one your attention.
