Wines by KT Rosa pairs eighty per cent Shiraz with twenty per cent Riesling, an odd couple that works beautifully.

The fruit grows without irrigation on red loam over limestone at Watervale, in sustainably farmed vineyards at the cooler southern end of the Clare Valley. Whole bunches are pressed gently so colour and phenolics stay light, then the juice ferments on its own wild yeasts with no enzymes used. The finished wine is vegan friendly, sits at twelve per cent alcohol and is sealed under screwcap.

There is an exotic perfume of fresh red berries here, and the palate is juicy, dry and clean through the finish. Serve it cold, near 8 degrees, with charcuterie, sushi or a roast chicken sandwich.
