Description

Lark Hill Hudson Vineyard GSM is a Rhône-style blend of Grenache, Shiraz and Mourvèdre from a single New South Wales site.

GSM is the Australian shorthand for the southern Rhône recipe, where Grenache brings red fruit and lift, Shiraz gives colour and spice, and Mourvèdre adds structure and a savoury edge. Lark Hill was established in 1978 by Sue and David Carpenter and is now made by their son Chris, with the estate vineyard farmed biodynamically. The Hudson Vineyard is a separate, warmer site that suits these varieties, which will not ripen reliably at the home block's altitude. Each variety is fermented separately with native yeast and matured in large older oak.

Serve at 16 to 17 degrees with roast lamb, slow-cooked shoulder or a tagine. Drink over eight years.
