Laughing Jack Jack's Semillon 2021

Laughing Jack Jack's Semillon is a dry Barossa Semillon from two old-vine sites.

Two parcels in equal measure make up the 2021: a Greenock vineyard dating to 1964, and the family's Creek Block, put in thirty years later in 1994. Both sit on red-brown earth over dark red clay with bluestone and limestone underneath. Fruit was destemmed and rested briefly on skins, then pressed as whole berries and fermented wild in stainless steel, then four weeks on lees and bottling unfined. Shawn Kalleske treats the variety as a textural white, not a squeaky one, and the skin contact and lees work are there to give it body without oak.

Green apple grip, citrus weight and a fair whack of energy, finishing salty and mouth-watering. It will build wax and honey with a few years in the cellar. Serve at 10 degrees. Match it with grilled prawns, salt and pepper squid, or a chicken and avocado salad.
