Description
Laurent Roumier Chambolle Musigny Premier Cru is an assemblage drawn from three separate premier cru climats, bottled here in magnum.
Chambolle-Musigny has twenty-four premier crus, ranged along the slope above and beside the village, and a blend across several of them is a long-standing Burgundian practice: once climats are mixed the wine may only be sold as premier cru without a vineyard name. Three premier crus go into this cuvée. Chambolle's premier cru band sits on thin, stony limestone soils higher up the hill than the village land, giving more structure and length while keeping the commune's characteristic perfume. Pinot Noir is the sole grape, fermented in small vats and raised in barrel with a higher proportion of new oak than the village wine. The magnum format is prized in Burgundy for its slower, steadier maturation.
More structured than the village wine and built to age, it suits game birds, beef and mature cheeses; serve at around 16 to 17 degrees and decant young bottles.
