Les Cortis Vin de France Naxide Blanc 2021

Les Cortis Vin de France Naxide Blanc is a blend of Chardonnay and Altesse fermented separately in tank and old barrique before assembly.

Altesse, known as Roussette in Bugey and Savoie, is the region's most serious white variety, and Naxide sets it against Chardonnay from the same hills. Each variety is handled on its own terms: the Chardonnay is whole-bunch pressed straight to tank, the Altesse to old barriques, and both ferment slowly with their native yeasts on fine lees. The vessels are stirred a handful of times, no sulphur is added during élevage, and the wines rest for twelve months before blending and bottling. Jérémy Decoster describes the division of labour plainly enough: the Chardonnay supplies flesh and weight, while the Altesse brings aromatic precision and tension. The result is a textured white with a firm spine, made with very little intervention.

Drinking well now and for four or five years, it suits roast chicken, river fish or a Comté and walnut plate. Serve at 10-12°C.
