Les Héritiers du Comte Lafon Pouilly-Fuissé 'En Chatenay' is a small-production Chardonnay from the best-known appellation of the Mâconnais.
Only about a third of a hectare in size, this north-facing parcel is one of the smallest holdings in the range that Dominique Lafon has assembled in southern Burgundy since 1999. Half of the vines date from 1960 and half from 1980, rooted in deep, iron-rich clay over hard limestone. As across the estate, the vineyard is certified organic and tended along biodynamic lines. Unlike the Mâcon wines, which are raised in large casks, this one is fermented in used Burgundy barrels and kept on its lees for a year, then rested for a further six months in stainless steel before bottling. The result is creamy and concentrated, with a long, saline finish.
Take it out of the fridge fifteen minutes before pouring, aiming for around 12 degrees. It is a fine match for scallops, lobster, veal in a cream sauce or roast chicken with tarragon. Drink now or cellar for up to eight years.
