Description
Bel Air is Les Quatre Piliers' flagship Touraine white, from the estate's oldest Sauvignon Blanc vines on the left bank of the Cher.
Touraine's Sauvignon Blanc is grown across the country between Blois and Tours and is usually made in tank for early drinking; this cuvée takes a different route. Valentin Desloges works the Bel Air terroir, a south-facing site where some of the vines reach sixty years of age. Age and low yields account for part of the wine's intensity, but so do the soils: red clay dominates, lying just beneath a layer of flinty sand, and the combination gives spicy generosity and breadth of texture. The winemaking follows the estate's Chapitre I cuvée, except that this wine is fermented in barrel and matured for eighteen months rather than twelve, in ex-Coche-Dury barrels with 20% new oak from the domaine's own coopering.
Drink over the next four to six years with grilled fish, roast chicken or goat's cheese; serve at 10–12°C.
