Les Quatre Piliers Touraine Première Cuvée Sauvignon Blanc Chapitre 1 is a single-site Sauvignon Blanc, a rarity in an appellation built on blended volume.
Touraine's Sauvignon Blanc is usually assembled across many parcels, so a wine drawn from one vineyard stands out. This comes from vines aged between 20 and 50 years in Les Puits aux Chiens, a west-facing site on the right bank of the Cher and the highest point of the commune of Noyers, where shallow flint sands and white clay sit over Turonian limestone. In the cellar the grapes were pressed as whole bunches and fermented with indigenous yeasts in used barrels ranging from 228 to 500 litres, some coopered by François Frères from oak staves that Valentin Desloges selected and seasoned himself from the nearby Loches forest. The wine aged 12 months with a single racking and plenty of lees contact, then was bottled by gravity without filtration. The style is built around texture and detail rather than varietal typicity, with saline mineral drive and a silky depth.
Ready now and worth three to five years. Serve at 10-12°C with oysters, grilled whiting or a fresh goat's cheese.
