Description
Lethbridge Elixir is a sweet white made by freezing and thawing the pressed juice of aromatic grapes.
Aromatic white grapes from cool Victorian vineyards were picked and pressed, and the juice was then frozen solid and left to thaw slowly, so the first liquid to run off carried most of the sugar and flavour and very little of the water. At that concentration fermentation was never a given. Once the must was in barrel, wild yeast took it on anyway, working gently across eight months. The finished wine sits at 150 grams per litre of residual sugar and 11.5 per cent alcohol, and comes in a half bottle.
Thick and sweet without being cloying, with dried apricot, honey and orange peel held up by acid. A small glass goes a long way. Serve at 8 degrees. Pour it with blue cheese, a fruit tart, creme brulee, or on its own after dinner.
