Lignier-Michelot Morey St Denis Aux Chezeaux is a premier cru from the commune where this domaine has its cellars, now with a decade of bottle age.
Morey-Saint-Denis is the smallest of the three great red communes of the central Côte de Nuits, wedged between Gevrey-Chambertin and Chambolle-Musigny, and its wines are usually described as sitting between the two: the structure and dark fruit of Gevrey with something of Chambolle's finer grain. The premier crus occupy the mid-slope on thin, stony limestone soils above the village, several of them lying directly beneath the grand cru band of Clos de la Roche and Clos Saint-Denis. Pinot Noir is the only grape. Domaine Lignier-Michelot sorts closely, ferments in small vats and ages its premier crus in oak barrel for around eighteen months with a moderate share of new wood.
Firm and savoury but softened by bottle age, it suits beef, game and mushroom dishes; serve at around 17 degrees.
