Linnaea 8 Track Sally Sangiovese 2023

Linnaea 8 Track Sally Sangiovese is an unoaked Heathcote Sangiovese matured in concrete.

Heathcote's greenstone-derived soils formed from underground volcanoes as much as 600 million years ago, and they are notably rich in minerals, which is a large part of why the region grows the reds it does. The Sangiovese block holds seven clones, from modern Italian selections to suitcase cuttings allegedly smuggled in some years back, planted tight on modern rootstocks with crops kept small. Fruit is hand-picked and chilled overnight, then taken to the cellar under Dan and Michelle's house in Malvern and destemmed into open-top fermenters. Handling is gentle, maceration extended, and the wine goes to concrete egg to rest on lees until bottling, unfined and unfiltered, without ever seeing oak.

Sour cherry, blood orange and dried herb, with the chalky tannin the variety does well and no wood to get in the way. Dry and savoury. Serve at 15 to 16 degrees. Match it with a tomato and beef ragù, roast chicken, pizza or a plate of pecorino.
